Ghadah's 'Chicken Schwarma'

Ghadah usually makes chicken schwarma wraps for her family when she needs something quick and simple. Having a family of 5 boys, this is definately a winner and saves a lot of hard work slaving away in the kitchen. 

This is her version of chicken wraps; a cross between the Mexican faija and the Lebanese schwarma. 

CHICKEN SCHWARMA RECIPE

STEP 1: Slice a couple of peppers and red onions.



STEP 2: Slice chicken breast into bite sized pieces. Wash with salt and vinegar.


STEP 3: Heat about 1cm of oil in a pan until smoking hot. Add the onions and keep on cooking on high heat.


The onions will caramelise and breakdown after about 15 minutes. Keep stirring regularly so that they don't stick onto the bottom of the pan. Add the sliced peppers and continue to cook. 


STEP 4: When the vegetables have cooked, add the sliced chicken. Add some salt and white pepper to taste. Cover the pan to allow the chicken to cook. Stir occassionally.


STEP 5: Slice tortilla wraps in half and sprinkle with a little cheese and spoon over a little of the filling. Roll tighly and put into an oven-proof tray. Don't worry if there is too much filling; the cheese will melt when heated and will help to keep the wraps together.


STEP 6: Bake/grill in oven until warm and browned on the top.
