Xiaoyan's 'Sweet Potato Balls'

Sweet potato balls are a type of 'small eat', meaning a little snack, which are eaten in the Fuqing city of Fujian Province. Being so close to the sea, the cuisine is heavily influenced by the fresh seafood that is so readily avaliable. 

The soft sweet potato casing of  these delicate bites are filled with a mix of meat, oysters, seaweed, carrots and cabbage. They can then be steamed, boiled or pan-fried to provide a great accompliment to a main meal or to eat simple as a snack. 

The cooked sweet pototo is mixed with sweet potato flour, which helps to give texture and binds the pastry. This type of flour is not commonly found in England and was bought especially from China...it looks like rocks!
