Auntie Winnie's 'Steamed Salted Egg with Meat'

The name is this dish in Chinese is 老少平安 which literally translates as 'old, small, peace'. The reason behind the name is because it is a good dish for both the elderly and the young; it is very soft and easy to eat!! Just a few spoonfuls of this will go down very well with a bowl of rice and will help small children to eat all of their meal. It is extremely quick and easy and simple, using everyday ingredients.

The saltiness from the salted eggs gives the dish a deep flavour without the need to add extra salt and the chopped up yolk from the egg allows everyone to have a fair share of this delicious ingredient. The extra egg helps to make the dish bigger and to dilute the salty flavour. 

Salted eggs are usually shop-bought, but can easily made by putting fresh eggs into brine for at least a month. Once salted, they can be used for a variety of dishes.
