Ghadah's 'Chicken with Honey'

Ta'if, Saudi Arabia

Traditional food is great, but there's always room for a little imagination and interest into other cuisines and tastes. An all round cook should be able to master not only their own culinary dishes, but also be able to have a repertoire of other recipes. Here is an example of a self-taught international chef, whose personal interest in cooking and sharing new foods with the family has brought her to keep on learning new dishes every week for the past 15 odd years.

This French inspired dish is both simple and quick to prepare. The chicken is first washed and rubbed with lemon to give it a freshness, before being browned in a butter and honey sauce with a hint of white pepper to balance out the flavours. After roasting until tender, the skin is gently browned under the grill until crispy.

The chicken is certainiy not a classic Saudi tasting dish, but has given both family and friends a pleasant surprise and introduce to new combination of flavours.
