A classic Hong Kong breakfast; macaroni served in a tasty clear broth with vegetables and meat.
This used to be a favourite breakfast for Janet before a long day at school; prepared lovingly by her dad. As she grew older, her dad taught her how to make it and she learnt to make it for herself, but still with the help of dad who would still prepare the main ingredients. Now, more than 8 years later,...Janet is definately able to prepare the whole dish, but it's still done with a bit of dad's help, such as marinating the meat! The ingredients vary according to what is avaliable at home; sweetcorn, tomotoes, meat slices, and duck 'knee joint' is a tasty speciality.
It's really quick, simple and easy. However as times have changed, breakfast is no longer as popular because it's too early! This dish is now eaten more often for lunch or as a midnight snack!
RECIPE for MACARONI IN SOUP
STEP 1: Cook the macaroni (moon-shaped) in salted water until al dente. Drain and rinse with cold water to prevent overcooking.
STEP 2: Marinate the meat slices with soy sauce, white pepper, and other seasonings as preferred.
Bring a pan of water to the boil. Add the meat and boil until cooked.
STEP 3: Add the macaroni to the pan and allow to boil to heat through.
STEP 4: Add some tomatoes. Cherry tomotoes are great and are fun to eat if they haven't burst during cooking, as they pop in your mouth!
Normal tomatoes are equally as tasty!
STEP 5: Add a sprinkling of chopped spring onions for flavour and colour and some chicken stock/powder for flavour.
STEP 6: Allow the soup to come to the boil and the dish is ready. Serve up in large bowls and eat immediately.
This stuff is so good that it's even served for breakfast at McDonald's and KFC in Hong Kong!
