Auntie Winnie's version of Grandma's 'Bittermelon in Black Bean Sauce'


This is another recipe that I got from auntie in Canada. Again, it's adish that was cooked by my grandma. Traditionally, it should have pieces of stir-fried beef, but my auntie doesn't like to eat that much meat so prefers the vegetarian option. Either way, bittermelon, as the name suggests, does have a somewhat acquired taste and takes some getting used to. 

Firstly, wash and chop the melon into chunks.


Next, prepare the black beans by washing them in water. Rinse well and rub gently to remove the outside skin. Make sure that all of the skin is discarded and the beans are throughly washed through.



Pound and grind the washed black beans into a mash.


Heat a little oil in a wok and add some chopped ginger, garlic and the black beans. Fry until fragrant. Add the melon and cook. Add a little salt and sugar to taste. If desired, add a little chicken powder to get a deeper flavour (this is good especially if you do not use meat in the dish). Add a little water and cook until soft. When cooked, thicken the sauce using some cornflour.


Serve straight away with boiled rice and other dishes.
