Kelly's 'Soy Sauce Chicken'

Although a dish with few ingredients, it is inevitable that great care must be take to ensure that the precise timing is kept to cook the chicken properly, the correct amount of soy sauce is used to ensure that the skin turns a deep brown collour and the right balance of ingredients are added to make this succulent chicken meal.

This type of chicken is commony eaten in many Chinese households and is fantastic for providing a deep chicken flavoured soy sauce that tastes delicious even if eaten with rice alone. However, it is the technique that differs between one family to the next. This is Kelly's grandma's way of cooking. She used to spend a lot of time preparing this meal...from buying the meat from the butcher, choosing the best tasting soy sauce and to carefully cooking the meat. The recipe was cooked from memories of home; of grandma lovingly preparing dinner for her family.
  
And after the cooking...the chopping is just as important!
