Daddy's 'Potato Cake'

These potato cakes are made using a classic combination of finely grated potato, minced meat, dried shrimps and spring onions; economical everyday ingredients to feed the whole family. Although a simple recipe, it is the grating of the potatoes that consumes the longest time. Back in the day, there were no graters or food processors like now. The grater was made using a old can of sardines, and hole-punched using a nail and hammer; it was a potential 'health and safety' hazard, and there were many a time when fingers were cut from using this lethal utensil!

This was the first time that this dish had ever been cooked by Dad and also the first time that he got to eat it for over 30 years! Definately a great acheivement and nostalgic experience to remember!
