Alia's 'Mitte Chawal'

Manjwal, Pakistan

A favourite 'sweet rice' dish which is a perfect finish to a meal or just as a snack. The stunning yellow rice is cooked with melted butter and sugar and mixed with glace cherries, raisins or coconut. When ready, it is should be eaten warm, or is surprisingly tasty mixed with savoury brown rice.

The key to this recipe is to mix the rice very gently with a flat metal ladle to stop the grains of rice from breaking. The rice should be cooked for the right length of time or it will become too soft. These skills come only from experience, which is the reason why mum is always be around to help out, just in case!
