Shano's 'Maklobaa'

This is an incredibily easy and quick dish that is warming and delightful to eat as a family. Maklobaa is usually made with layers of fried chicken or meat, with hearty vegetables such as peppers, pototoes, courgettes, especially aubergines, covered by a layer of creamy tomato puree and rice. It is often cooked in a pan on the hob and turned out onto a large plate to serve.

It would be lovely if you could give some indication of the ingredients and how to combine them in this dish - it looks like something I could make serve as a simple but hearty meal for friends. Do you cook everything first and then combine it into the layers? It looks and sounds absolutely delicious!

  2. Thank you so much for leaving the first ever comment on this blog! The project is still in the very early stages and I am still debating whether to put the recipes onto this blog...I hope to collect many recipes and possiblly make a book!

    But for now....the recipe for this dish is:
    1. Season half a chicken (cut into portions) with salt and spices. Fry until brown. Put into the bottom of an ovenproof pan.
    2. slice vegetables (aubergine, peppers, potatoes, courgettes) and fry in oil until brown. Put evenly over the chicken.
    3. To prepare the rice, soak about 3 cup rice in hot water for 15 mins, Drain. Boil the rice in plenty of well-salted water with 4-5 tbsp spices (biryani spice), for about 10 minutes. Drain.
    4. Put the rice over the chicken. Cover with foil. Bake in oven at 150C for about half an hour.

    1. Thank you so much! Sounds lovely and easy enough to make for lots of people! What kind of rice do you recommend using for this?
      I'll let you know how it goes if I make it. And the way this is looking so far, I think you'd have many recipes for a really interesting cookbook!

    2. I think that basmati rice is usually used, but I'm sure that you can use any rice! Hope that it turns out well!!
