Adriana's 'Salata de Boeuf'

Although traditionally made with beef, as the name suggests, this salad is often made with chicken. It is essential that the creamy mayonnaise base is made from scratch and is well-mixed with the finely chopped carrots, potatoes, pickled cucumbers and chicken. The top of the salad can be decorated with an endless variation of vegetables arranged into creative patterns to suit the occassion. 

Salata de boeuf is a celebratory dish and is only ever eaten on special occassions such as birthdays, New Year, and Easter; Christmas would not be complete without it!
